Description

This cozy apple cider cinnamon bread combines the warm flavors of fall with the nostalgic taste of cider donuts in an easy-to-make loaf. With a crackly cinnamon sugar crust and a moist interior infused with reduced apple cider and spices, it’s the perfect treat for autumn mornings, holiday brunches, or a sweet afternoon snack.


Ingredients

For the Bread
1 cup apple cider (reduced to 1/2 cup)
1/2 cup unsalted butter, melted
1/2 cup granulated sugar
1/2 cup light brown sugar, packed
2 large eggs
1/3 cup sour cream
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 teaspoons ground cinnamon
1/4 teaspoon ground nutmeg
1/8 teaspoon ground cloves

For the Cinnamon Sugar Topping
1 tablespoon melted butter (for brushing)
1/4 cup granulated sugar
1 teaspoon ground cinnamon


Instructions

  • In a saucepan, simmer 1 cup of apple cider over medium heat until reduced to 1/2 cup, about 10–15 minutes. Let it cool slightly.

  • In a large bowl, whisk together melted butter, granulated sugar, brown sugar, and eggs until smooth. Stir in sour cream, vanilla extract, and cooled cider.

  • In another bowl, whisk flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves. Gradually stir dry mixture into the wet ingredients until just combined.

  • Pour batter into a greased 9×5-inch loaf pan. Bake at 350°F (175°C) for 45–55 minutes or until a toothpick comes out clean. Let cool in pan for 10 minutes, then transfer to a wire rack.

 

  • While warm, brush the top with melted butter. Mix sugar and cinnamon, then sprinkle generously over the loaf. Lightly press to help it adhere. Let cool completely before slicing.

Notes

Reduce the cider fully to enhance flavor—don’t skip this step.

Use room-temperature eggs and sour cream for even mixing.

The cinnamon sugar topping must be applied while the loaf is warm for best adherence.

To make muffins, reduce baking time to 18–22 minutes.

This loaf freezes well and makes a great gift during the holidays.
