  • 1 small yellow onion, thinly sliced

  • 3 cups cooked shredded chicken (rotisserie works great)

  • 4 hoagie rolls or sub buns

  • 46 slices provolone cheese or mozzarella

  • Optional toppings: ranch or blue cheese dressing, chopped green onions, sliced jalapeños


Instructions

  • Sauté the onions: In a large skillet, melt the butter over medium heat. Add the thinly sliced onions and cook for about 6–8 minutes, stirring occasionally, until they become soft and golden. You want them to caramelize slightly for added sweetness.

  • Add the chicken: Once the onions are softened, stir in the cooked shredded chicken. Let it warm through for 2–3 minutes, mixing it with the onions so everything is well combined.

  • Pour in the buffalo sauce: Add your buffalo sauce to the skillet, stirring until the chicken is evenly coated. Let it simmer for 2–3 minutes so the sauce can thicken slightly and really soak into the chicken.

  • Add the cheese: Place your cheese slices over the chicken mixture in the skillet. Reduce the heat to low and cover the pan for a minute or two to allow the cheese to melt completely. Once melted, stir the mixture gently to combine the gooey cheese with the chicken and onions.

  • Toast the buns: While the cheese is melting, you can toast your hoagie rolls on a baking sheet under the broiler for 1–2 minutes until lightly golden. This step is optional but highly recommended for texture.

  • Assemble the sandwiches: Spoon the cheesy buffalo chicken mixture into each toasted bun. Top with additional cheese if desired, and add optional toppings like ranch drizzle, blue cheese crumbles, or jalapeños.

 

  • Serve immediately: These sandwiches are best enjoyed hot and melty, with a side of celery sticks, fries, or a crisp green salad.

While this recipe is simple, there are a few mistakes you’ll want to avoid to ensure the best results. One of the most common errors is using dry or overcooked chicken. Make sure your shredded chicken is tender and moist—if using leftovers, you can warm them in a little broth or water before adding to the pan.
