For the burgers:

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1 teaspoon garlic powder

  • 1 tablespoon Worcestershire sauce

  • 1 tablespoon Dijon mustard

For the toppings:

  • 1 tablespoon olive oil or butter

  • 1 medium yellow onion, thinly sliced

  • 4 slices Irish cheddar cheese

  • 4 slices cooked bacon (optional)

  • Lettuce or arugula (for freshness)

  • Pickles (for tang)

For the sauce:

  • 1/4 cup mayonnaise

  • 1 tablespoon Dijon mustard

  • 1 teaspoon honey

  • 1 teaspoon lemon juice

For serving:

  • 4 burger buns (toasted for texture)

Instructions

Start by preparing your caramelized onions. Heat a tablespoon of olive oil or butter in a skillet over medium-low heat. Add the thinly sliced onions and a pinch of salt. Cook slowly for about 20–25 minutes, stirring occasionally until they’re deeply golden and sweet. While those cook down, prepare the burger patties.

In a large bowl, combine the ground beef with Worcestershire sauce, garlic powder, Dijon mustard, salt, and pepper. Mix gently—just enough to incorporate the seasonings. Divide the mixture into four equal portions and shape them into patties slightly larger than your buns, since they’ll shrink during cooking.

Preheat your grill or skillet to medium-high heat. Once hot, add the patties and cook for about 3–4 minutes per side, depending on thickness and desired doneness. When the patties are nearly done, place a slice of Irish cheddar on each and cover the pan to help the cheese melt.

While the burgers rest, whisk together the sauce ingredients: mayonnaise, Dijon mustard, honey, and lemon juice. Toast the buns until golden and begin assembling.

 

To build your Irish pub burgers, spread the sauce on both sides of the bun, layer with lettuce, the cheesy burger patty, bacon, caramelized onions, and pickles. Top with the bun and serve immediately.

Notes

If you want to switch things up while staying within the pub burger theme, consider using ground lamb instead of beef. Lamb has a slightly gamier flavor that pairs well with strong cheeses and bold sauces.

For a leaner option, try using ground turkey with added olive oil or egg yolk to maintain moisture. Vegetarian? You can use a hearty plant-based patty, and still include all the toppings like caramelized onions, cheese alternatives, and that signature Dijon sauce.

 

You can also infuse your burger with herbs like thyme or rosemary for an earthy note, or make it spicier by adding hot sauce or jalapeños to the sauce.
