Instructions

  • Preheat the oven to 400°F (200°C). Line a baking sheet with foil or parchment and place a wire rack on top.

  • Lay the bacon on the rack in a single layer. Bake for 15–20 minutes or until the bacon is almost cooked through but not fully crisp.

  • While the bacon bakes, make the caramel. In a small saucepan over medium heat, combine the brown sugar, maple syrup, and butter. Stir until everything is melted and smooth. Let it bubble gently for 2–3 minutes, then remove from heat and stir in the vanilla extract. Add any optional spices like cayenne if using.

  • Brush the caramel mixture onto the partially cooked bacon using a silicone brush or spoon. Return the bacon to the oven and bake for another 8–10 minutes, or until the glaze is bubbling and the bacon is fully crisp.

  • Cool slightly on the rack before transferring to a serving tray. The caramel will harden as it cools, creating that delightful candy-like texture.

 

  • Sprinkle with sea salt or herbs like rosemary if you want a gourmet touch. Serve warm or at room temperature.

Notes

  • Using thin bacon. It cooks too quickly and doesn’t hold the caramel well.

  • Skipping the rack. Bacon baked directly on foil becomes greasy and soggy.

  • Overcooking the glaze. As mentioned, this leads to a hard caramel that may crack or burn.

  • Applying caramel too early. Add the glaze after the bacon is mostly cooked to prevent burning.

 

  • Not letting the bacon rest. It needs time to set so the glaze can firm up and create that perfect chewy texture.
