  • 1/2 teaspoon freshly ground black pepper
  • 1 (5-ounce) package baby spinach (about 5 cups)
  • 4 garlic cloves, thinly sliced
  • 1 teaspoon lemon zest, plus more for garnish
  • 1/4 teaspoon red pepper flakes (optional)
  • 3 1/2 ounces feta cheese, crumbled

Instructions

  1. Prepare Pan: Preheat oven to 400°F (200°C). Place gnocchi on a rimmed baking sheet, drizzle with 3 tablespoons olive oil, season with salt and pepper, and toss. Spread evenly.
  2. Roast Gnocchi: Roast for 10 minutes, stirring halfway through for even crisping.
  3. Add Veggies: Scatter spinach, garlic, lemon zest, and remaining oil over gnocchi. Toss and roast another 10–15 minutes until spinach wilts and gnocchi is golden.
  4. Finish: Remove from oven, top with feta and red pepper flakes. Garnish with extra lemon zest and serve warm.
