- 4 garlic cloves, thinly sliced
- 1 teaspoon lemon zest, plus more for garnish
- 1/4 teaspoon red pepper flakes (optional)
- 3 1/2 ounces feta cheese, crumbled
Instructions
- Prepare Pan: Preheat oven to 400°F (200°C). Place gnocchi on a rimmed baking sheet, drizzle with 3 tablespoons olive oil, season with salt and pepper, and toss. Spread evenly.
- Roast Gnocchi: Roast for 10 minutes, stirring halfway through for even crisping.
- Add Veggies: Scatter spinach, garlic, lemon zest, and remaining oil over gnocchi. Toss and roast another 10–15 minutes until spinach wilts and gnocchi is golden.
- Finish: Remove from oven, top with feta and red pepper flakes. Garnish with extra lemon zest and serve warm.
