Description

This easy Crockpot Kielbasa and Green Beans recipe is perfect for busy weeknights. With minimal prep and rich, savory flavors, this hearty dish is made with smoked kielbasa and tender green beans, all slow-cooked to perfection in your crockpot.

Ingredients

Scale
  • 1 lb smoked kielbasa, sliced into rounds
  • 4 cups fresh or frozen green beans
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes (optional, for extra flavor)
  • 1/2 cup chicken broth
  • 1 tablespoon olive oil
  • 1/2 teaspoon paprika
  • 1/4 teaspoon black pepper
  • Salt to taste
  • 1/4 teaspoon dried thyme (optional)

Instructions

  1. In a skillet, heat the olive oil over medium heat. Add the chopped onion and garlic and sauté for 2-3 minutes until softened and fragrant.
  2. Transfer the sautéed onion and garlic to the crockpot. Add the sliced kielbasa, green beans, diced tomatoes (if using), chicken broth, paprika, black pepper, salt, and thyme. Stir to combine.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours until the kielbasa is tender and the green beans are cooked through.
  4. Taste and adjust seasoning as needed. Serve hot and enjoy this easy, comforting meal!

Notes

  • You can use frozen green beans if fresh is not available, but fresh green beans will have a better texture.
  • If you prefer more vegetables, feel free to add carrots or potatoes to the crockpot for a heartier dish.
  • Leftovers can be stored in the fridge for up to 3 days and reheated easily.
