Ingredients
Scale
- 1 lb smoked kielbasa, sliced into rounds
- 4 cups fresh or frozen green beans
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes (optional, for extra flavor)
- 1/2 cup chicken broth
- 1 tablespoon olive oil
- 1/2 teaspoon paprika
- 1/4 teaspoon black pepper
- Salt to taste
- 1/4 teaspoon dried thyme (optional)
Instructions
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and garlic and sauté for 2-3 minutes until softened and fragrant.
- Transfer the sautéed onion and garlic to the crockpot. Add the sliced kielbasa, green beans, diced tomatoes (if using), chicken broth, paprika, black pepper, salt, and thyme. Stir to combine.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours until the kielbasa is tender and the green beans are cooked through.
- Taste and adjust seasoning as needed. Serve hot and enjoy this easy, comforting meal!
Notes
- You can use frozen green beans if fresh is not available, but fresh green beans will have a better texture.
- If you prefer more vegetables, feel free to add carrots or potatoes to the crockpot for a heartier dish.
- Leftovers can be stored in the fridge for up to 3 days and reheated easily.
