Ingredients

1 cup natural creamy peanut butter (unsweetened or lightly sweetened)

1½ cups crushed cornflakes or crispy rice cereal

2 tablespoons maple syrup or honey

1½ cups dark or semi-sweet chocolate chips

1 teaspoon coconut oil (for melting chocolate)
Instructions
Step 1: Crush and mix the filling
Start by crushing the cornflakes or cereal into small pieces. You can do this using a food processor or by placing them in a zip-top bag and crushing them with a rolling pin. In a large bowl, mix the crushed cereal with the peanut butter, maple syrup, vanilla, and sea salt until a thick dough forms.
Step 2: Shape into eggs
Using your hands or a small cookie scoop, shape the mixture into egg-like ovals. You can make them as big or as small as you like, depending on how you plan to serve them. Place the shaped eggs on a parchment-lined tray and freeze them for 20–30 minutes. This helps them firm up so they’re easier to dip in chocolate later.
Step 3: Melt the chocolate coating
In a microwave-safe bowl or using a double boiler, melt the chocolate chips and coconut oil together. Stir frequently until smooth and glossy. Be careful not to overheat the chocolate, as it can seize if it gets too hot.
Step 4: Coat the eggs in chocolate
Remove the eggs from the freezer and dip each one into the melted chocolate using a fork or dipping tool. Let the excess chocolate drip off before placing them back on the parchment-lined tray. If desired, sprinkle with chopped nuts, shredded coconut, or festive sprinkles before the chocolate sets.
Step 5: Chill and enjoy
Place the chocolate-covered eggs back in the refrigerator for 20–30 minutes or until the chocolate is fully set. Once firm, they’re ready to enjoy!
