- 1 small yellow onion, diced
- 2 celery stalks, diced
- 1 medium carrot, peeled and diced
- 3 garlic cloves, minced

- 1 teaspoon dried oregano
- ½ teaspoon red pepper flakes (optional)
- 2 (15-ounce) cans white beans, drained and rinsed
- 4 cups low-sodium chicken broth
- 2 cups water
- 1 bunch kale, ribs removed and leaves chopped
- Freshly ground black pepper, to taste
- Grated Parmesan, for serving
Instructions
- Brown Sausage: Heat olive oil in a large pot over medium-high. Add sausage, breaking it up, and cook until browned (6–8 minutes). Transfer to a plate.
- Sauté Vegetables: Add onion, celery, and carrot to pot. Cook 5–6 minutes until softened. Stir in garlic, oregano, salt, and red pepper flakes; cook 1 minute.
- Add Broth & Beans: Return sausage to pot. Stir in white beans, chicken broth, and water. Bring to a gentle boil, then reduce heat.
- Simmer with Greens: Add kale and simmer 15–20 minutes, uncovered, until flavors meld and greens are tender.
- Serve: Ladle into bowls, season with black pepper, and top with grated Parmesan. Enjoy with crusty bread or a salad.

- For a creamier soup, stir in ½ cup heavy cream or a spoonful of cream cheese at the end.
