Ingredients

1 ball pizza dough (about 250g), homemade or store-bought
1 small organic lemon, thinly sliced, seeds removed
1 tablespoon olive oil
1 garlic clove, minced
¾ cup (85g) shredded mozzarella cheese
¼ cup (60g) ricotta or goat cheese (optional)
1 teaspoon fresh thyme leaves or ½ teaspoon dried thyme
Salt and freshly ground black pepper, to taste
Fresh basil or arugula for garnish (optional)


Instructions

Preheat oven to 475°F (245°C), placing a pizza stone inside if using.
Roll out pizza dough on a floured surface to 10–12 inches diameter; transfer to parchment paper or baking sheet.
Brush dough with olive oil mixed with minced garlic evenly.
Spread dollops of ricotta cheese (if using) and sprinkle mozzarella over dough.
Arrange thin lemon slices evenly atop the cheese. Sprinkle thyme, salt, and pepper over the pizza.
Bake for 10–12 minutes until crust is golden and cheese is melted and bubbly.
Remove from oven, let cool for 1–2 minutes, then top with fresh basil or arugula if desired. Slice and serve warm.

Notes

Use very thin lemon slices for best texture and to avoid bitterness.

Optional: Soak lemon slices in water 10 minutes and pat dry if rind is thick.

Add a drizzle of honey or chili flakes after baking for flavor variations.

Store leftovers in airtight container, refrigerate up to 3 days, and reheat in oven for best texture.
