Description

Pepper Beef Medallions are lean, tender, and packed with flavor—an elegant main dish that fits perfectly into clean eating. With simple seasoning, fresh herbs, and bold cracked pepper, they’re ideal for weeknight dinners, meal prep, or special occasions.

Ingredients

Scale

Ingredients

  • 1 lb (450 g) beef medallions (1-inch thick cuts of tenderloin or sirloin)
  • 2 tbsp freshly cracked black pepper
  • 1 tsp sea salt
  • 2 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 tbsp butter (optional, for finishing)
  • Fresh herbs (parsley, thyme, or rosemary) for garnish

Optional Seasoning Additions

  • Smoked paprika
  • Crushed red pepper flakes
  • Avocado seasoning for creaminess and freshness

Instructions

  1. Prepare the meat: Pat beef medallions dry. Season generously with salt and cracked pepper.
  2. Heat skillet: Warm cast iron skillet over medium-high heat with olive oil.
  3. Sear: Cook medallions 3–4 minutes per side for medium-rare (135°F / 57°C internal temperature).
  4. Add garlic & butter: In the last minute, add garlic and butter. Spoon over medallions for richness.
  5. Rest: Transfer to a plate. Rest 5 minutes before slicing.
  6. Serve: Garnish with herbs and pair with fresh sides.

Notes

  • Cooking tips: Don’t overcrowd pan; use fresh cracked pepper for best flavor; cook by temperature, not time.
  • Avocado pairings: Add avocado lime drizzle, avocado herb mash, or avocado yogurt dip.
  • Healthy sides: Mediterranean Greek Salad, Cucumber Dill Salad, Ciabatta Bread, or Lemony Asparagus Risotto.
  • Meal prep: Slice leftovers and serve in pitas or with roasted veggies for portable lunches.
  • Storage: Refrigerate up to 3 days, freeze up to 2 months, reheat gently in skillet or oven.
