Easy no-bake Strawberry Shortcake Energy Bites made with oats and freeze-dried strawberries. Healthy, delicious, and perfect for anytime snacking or a quick energy boost.
Ingredients
1 cup rolled oats (gluten-free if needed)
1/2 cup freeze-dried strawberries, crushed
1/2 cup almond butter (or any nut/seed butter)
1/4 cup honey or maple syrup
1 teaspoon vanilla extract
1/4 teaspoon salt
Optional: 2 tablespoons shredded unsweetened coconut or white chocolate chips
Instructions

Crush freeze-dried strawberries into small pieces using a food processor or a plastic bag and rolling pin.

In a large bowl, mix rolled oats, crushed strawberries, and salt.

Add almond butter, honey or maple syrup, and vanilla extract. Stir until the mixture is sticky and holds together.

Fold in shredded coconut or white chocolate chips if desired.

Roll the mixture into 1-inch balls and place on a parchment-lined baking sheet.

Refrigerate for at least 30 minutes to set.

Store in an airtight container in the fridge for up to 1 week or freeze for longer storage.
Notes
Use natural, unsweetened nut butters for best results.
Don’t skip chilling the bites to help them hold shape.
Try adding chia seeds or protein powder for extra nutrition.
Top with crushed freeze-dried strawberries for extra flavor and presentation.
